An Exclusive Interview with Celebrity Chef Vicky Ratnani ! Courtesy Circle Workshops and Events

Celebrity Chef Vicky Ratnani, who is the face of some every popular food shows on tv like “Gourmet Central“, “Vicky Goes Foreign” and “Vicky Goes Veg” on NDTV Good Times and “Vickypedia” on Living Foodz was invited to Calcutta by Circle Workshops and Events to conduct a world cuisine workshop on 3rd October, 2015. I got the chance to speak to him before the workshop and here’s what he had to say!

 

Vicky Ratnani is a one of the most well known chefs in the country. He has traveled the world and collected culinary secrets from all over, which he now shares with us on his tv shows, combining all his knowledge under a revolutionary umbrella called World Cuisine.

Calcutta city being the culture capital of India, is always brimming with vibrant energy among its people to pursue and learn new things every day. It is this zeal of Calcutta that drives Circle Workshops and Events towards conducting more workshops related to cooking, baking, make up, yoga, dance, photography, personal grooming, hair styling and much more. So when Mallika Juthani, CEO of Circle Workshops and Events decided to get an expert chef like Vicky Ratnani to conduct a one of a kind, World Cuisine Culinary Workshop, the result was a tremendous success.

The Menu

Chef Vicky had a special menu set for this workshop, recipes of which had never been shown by him on any of his tv shows. So all the participants got a chance to learn Vicky Ratnani’s culinary secrets from the VickyPedia archives! Each Participant took home with them a detailed recipe manual!

Tips from the chef :

  • Don’t wait for diwali to use your saffron! Use it all year round otherwise it will sit in your fridge for a year and lose it qualities.
  • Eat as many seasonal fruits and vegetables as you can, because of the freshness.
  • When making a risotto, use the inexpensive and locally available barley instead of the expensive Arborio rice. Barley should ideally be soaked 5 to 6 hours before cooking.

The enthusiastic participants were not just home makers, but also were present among them was the youngest attendee all of 11 years of age, a youth was a photographer by profession but passionate about cooking and many others who came from different walks of life but had one interest in common, their love for food and the art of cooking.

When I asked Mallika Juthani, CEO of Circle Workshops and Events, as to why she chose Chef Vicky Ratnani to conduct this workshop in Calcutta, she stressed on the fact that since his show “Vicky goes Veg” Vicky Ratnani has added a whole new, innovative and fun dimension to vegetarian cooking. His knowledge of food from all over the world given his time on world cruise ships is a treasure for innovative cooking.

She also said that Circle Workshops and Events have conducted strictly vegetarian workshops so far, and the fact that Vicky Ratnani has not only  just won for himself the Zomato Chef of the Year award but has also just launched a new show, “Vickypedia” (on Living Foodz) only added to the wow factor of the workshop, where people can get up close and personal with the expert chef himself and get to learn so much straight from him.

According to her experience, there is a tremendous demand for more vegetarian workshops in Calcutta now than ever before and she hopes that this helps people understand the delights of healthy and innovative vegetarian food.

The workshop was a huge success which ended with a delicious lunch spread laid out by our food and venue partners Edesia which also included the dishes taught in the workshop along with dishes from their own menu. Each attendee was give a certificate of participation signed by the Chef himself!
